Vegan gluten free banana cake

I can honestly say, this is so far the BEST banana cake I made.
And this time is vegan!!!
And as usual gluten free.
What are you waiting for then?
Let's bake it.

Ingredients needed:
225g gluten free flour (I used 200g white gluten free self rising flour + 25g brown rice flour)
2 flax eggs
2 tsp baking powder
3 tbsp xylitol (or any other preferred sweetener)
3 tsp cinnamon
1 tsp all spice
2-3 ripe bananas
75g melted coconut oil (or olive oil)
handful dried fruits and nuts (I used raisins, cranberries, sunflower seeds and pumpkin seeds)
* chocolate chips (optional)
* apple pure (optional)

Instructions:
Prepare flax eggs: 1 tbsp of flaxseed + 3 tbsp of water. (= 1 egg).
Mix and let sit in fridge for 15mins.
Preheat oven to 180°C.
Mix all dry ingredients together.
Smash bananas and add an apple pure. Mix well.
Add wet ingredients into dry ones, add your flax eggs and mix again.
Grease your baking pan (of any shape) with a bit of coconut oil and fill up with the mixture.
Bake for 25-30mins.

Healthy Apple Pie

Remember that juicy tasty grandma's apple pie you used to enjoy every time you visited her for holiday? Or mom's one she used to make every Sunday after lunch? This is it!!!
Now, in healthier gluten free vegan version ready for you to get addicted to.
As I did after my first bite...

Ingredients:
150gr oats
150gr buckwheat flour (or any of your choice)
80gr coconut sugar
180gr melted coconut oil
5-6 juice sweet apples (or 3 apples and 3 pears, up to you)
cinnamon
1tsp vanilla powder (or drops)
pinch of salt

Instructions:
Grate coarsely apples.
Have 2 bowls ready to make a "dough".
Mix oats, flour, sugar, cinnamon, vanilla and salt together and divide the mixture in half.
Or, if this is easier for you, prepare identical 2 mixtures
(each 75gr oats, 75gr flour, 40r sugar, cinnamon, salt together) in 2 separate bowls.
Preheat your oven to 180°C and line your baking tray (20x20cm) with a baking paper.
Pour 1 mixture on the bottom (don't press too much!),  then add all grated apples (again, don't press too much!) and pour the other half of mixture on the top.
Now pour all the melted coconut oil on the top of the cake.
Bake for about 30-40minutes until golden and leave to cool down completely before serving.
But I am telling you it will be hard to wait :-)

Lemon coconut squares

So refreshing, zesty and tasty,
you wouldnt be able to put them down!

This batch makes around 30 small squares

Ingredients needed:

for a crust
5 tbsp coconut oil
3 tbsp maple sirup (I used agave nectar)
2 cups (480ml/200gr) shredded unsweetened coconut
1 cup almond flour
pinch of sea salt
2 egg whites (save the yolks for the lemon curd)

for filling:
3 eggs + 2 egg yolks
6 tbsp maple sirup (or agave)
1/3 cup (80ml) lemon juice + 1 tbsp zest (around 2 lemons)
1/3 cup (80ml/35gr) almond flour

Dust with 3 tbsp of coconut flour

Instructions:
Set the oven to 175ÂșC.
Melt coconut oil in a sauce pan on low heat. Add maple sirup (or agave), shredded coconut, almond flour and salt. Stir around until everything is combined. Remove from the heat. Crack 2 eggs, save the egg yolks for later and add whites to the sauce pan while stirring. Keep stirring for about 1 minute. The mixture should be quite sticky. Line a baking dish with baking paper and pour the coconut mixture into it. Use your hands, a spatula or the backside of a spoon to flatten it out. Press it down firmly so it becomes quite compact. Bake for 10-12mins. Meanwhile start to preparing the filling.
In large bowl, beat eggs + 2 egg yolks with an electric mixer until frothy. Add the rest of the ingredients. Beat for 2 more minutes. Pour the mixture over the baked crust in the baking dish. Bake for about 15 mins or until edges are light brown and the centre is set. Let cool for at least 15min before slicing up the squares. At the end dust with coconut flour.

Apple&Beet oat bars

Got totally inspired by the recipe from coconut-merchant.com.
Inspired by the look of these bars and also by the combination of juicy apples and sweet beetroots.

This recipe makes 1 tray - share them or keep them just for yourself :)

Ingredients needed:

3 apples (cored and peeled)
3 small beetroots (peeled)
2 cups organic jumbo oats
2 tbsp chia seeds
1 cup desiccated coconut (original recipe used 2 cups)
1 cup raisins
3-4 tbsp melted coconut oil
1/2 cup almond milk (original recipe used coconut milk)
1 tsp cinnamon
Your right! No sugar, no flour, no wheat, no egg :)
Instructions:

Cut apples and beets on quaters and roast them for a while (cca 10mins)
Throw them in the food processor, add melted coconut oil and blend until you reach a puree consistency. If the content is too thick, add a bit of milk. This is what I did.
Mix remaining ingredients in a bowl and stir in the puree.
Grease your baking tray with coconut oil, and pour the mixture in evenly.
Bake for 40 mins at 150°C
Leave to cool, then cut up into bars.
They should be slightly moist on the inside, but firm to the touch!
Store in the fridge.

Coffee doughnuts/muffins

Looove looove looove these!!!

I am an absolute coffee lover (on and off one haha) so I find these little circles incredible tasty.
Of course they go well with cup of coffee, but also tea :)

Ingredients needed:
chickpea flour
espresso coffee (make a normal STRONG instant coffee)
dates
*the amount depends on how many you want to make and which shape.
Basically the dough needs to be the same consistency like for muffins. Not too solid, not too liquidy.

Instructions:
Blend dates on high speed until you get a paste, add into flour and espresso mix.
Fill up your doughnut mould (if you dont have one, just use muffin cups).
The best is the silicone one which is not sticky.
Bake at 160°C for 10mins.
