Homemade strawberry jam without sugar



Very simple, delicious and healthy
Amount???...up to you  

I used:
2kg handpicked, organic, super sweet fresh strawberries
lees then 1/4cup water
1 tbsp arrowroot powder (for thickening)
2 tbsp lemon juice (from fresh lemon)
1 tsp vanilla powder (optional)

Instructions:
Clean strawberries, remove stems. 
Put them in a pan, use the handblender to mix them a bit. In a small bowl mix other ingredients. 
Pour into strawberries. 
Cook and continuously mix for about 40-45mins, leave cool down and pout into a glass jar. 
Store in the fridge for max 2 months.
I made it 1 hour ago and a half is already gone :)))

Stress during pregnancy


Stress during pregnancy changes infants' gut microbiota, causing allergies and digestive issues.

....it's commonly understood that stress during pregnancy can affect the newborn's health.

Apple&Beet oat bars

 

Got totally inspired by the recipe from coconut-merchant.com.
Inspired by the look of these bars and also by the combination of juicy apples and sweet beetroots.

This recipe makes 1 tray - share them or keep them just for yourself :)

Ingredients needed: 

3 apples (cored and peeled)
3 small beetroots (peeled)
2 cups organic jumbo oats
2 tbsp chia seeds
1 cup desiccated coconut (original recipe used 2 cups)
1 cup raisins
3-4 tbsp melted coconut oil
1/2 cup almond milk (original recipe used coconut milk)
1 tsp cinnamon
Your right! No sugar, no flour, no wheat, no egg :)
Instructions:

 Cut apples and beets on quaters and roast them for a while (cca 10mins)
Throw them in the food processor, add melted coconut oil and blend until you reach a puree consistency. If the content is too thick, add a bit of milk. This is what I did.
Mix remaining ingredients in a bowl and stir in the puree. 
Grease your baking tray with coconut oil, and pour the mixture in evenly.
Bake for 40 mins at 150°C
Leave to cool, then cut up into bars. 
They should be slightly moist on the inside, but firm to the touch!
Store in the fridge.

Probiotic chickpea yogurt


After a successfull version of probiotic yogurt made out of cashew nuts, 
this time I tried its chickpea version.

Why to eat a cheap, unhealthy supermarket yogurt poor of nutritional values, if you can have this super healthy, probiotic rich and good bacteria based homemade raw version?!

DIARY FREE - LACTOSE FREE - SUGAR FREE - RAW

It tastes so good and healthy you cant even imagine, unless you make it and try it yourself.

Ingredients needed:
organic chickpeas
water
probiotics
raw cacao powder
cinnamon
raw honey

Instructions:
Soak chickpeas  in water overnight, rinse well in the morning and keep them in the bowl/plate. 
Time to time rinse in a cold water until you see tiny sprouts coming up/as you can see on the above picture. This process lasts about 2 days.
Once they sprouted, blend them with bit of water (amount of water depends on the consistency you want to achieve) until smooth. Add 0.5 capsule of probiotics and keep covered at room temperature with a tissue for 1 day. 
Try it and if you like the taste, your yogurt is ready. Store in the fridge, best to be eaten within  2-3days.
Then you flavour it as desired.
I used just cacao, cinnamon and lot of honey :), because chickeas have very strong flavour.

A real treat for a coconut customer from a coconut merchant


After a long day at work, I finally came home and found this to be delivered into my flat.
This is what I call a proper customer service of top quality: 
I ordered this coconut jam that I am totally excited to try. On top of that there was a bag of coconut chips as a gift with this tiny warm and sincere message.
It really made my day.
Cannot wait to try the jam, finish, and order it again.

1-spoon raisin minipancakes with no added sugar or sweetener


 Ingredients needed (for cca 18 pieces):
1 banana
2 apples (grated)
1 egg
1/2 cup buckwheat flour
1/2 cup almond milk (or any other plant milk)
pinch of baking powder
cinnamon
raisins (soaked in hot water)
coconut oil for frying

Instructions:
Mix all ingredients together and start to make a minipancakes. 
And why I called this recipe 1spoon pancakes? 
The size of 1 pancake = 1 tbsp of pancake dough flattened on the pan :) 
Best to serve with fresh fruit or ice cream.
Or just simply grab one and eat it on its own.

Strawberry coconut muffins

Very yummy snack for a  summer day
Great combination of fresh strawberries and coconut 

Ingredients needed (for 16 muffins):
1 1/2 cup buckwheat flour
1 cup almond flour
1/2 cup shredded coconut
1/2 cup coconut chips
1/2cup coconut palm sugar (or honey)
2 eggs
1 cup plant milk
1/4 cup melted coconut oil
1tsp baking powder
pinch of salt
handful of fresh strawberries (chopped in small pieces)
*1 tbsp blackberry powder (for a colour=optional)

Instructions:
Mix all ingredients together and bake at 170°C for 15-20mins.

Homemade nutella

My very first homemade NUTELLA.

No sugar, no palm oil, no skim milk, no reduced minerals, no whey, no lecithin, 
no other weird stuff!!!

Just organic hazelnuts, organic dates, organic coconut oil, 
raw cacao, raw honey and raw milk.

Which version you prefer??? Which goods you put into your body??? 
 How much you care about your health and health of your family, children, friends???

For all of you, nutella lovers, here i come with this super receipe full of magnesium, minerals, calcium

Ingredients needed:
125gr hazelnuts
6 organic dates, pitted
2 tbsp raw cacao powder
1 tbsp melted coconut oil
1 tbsp vanilla extract
bif of raw honey (optional)
bit of raw milk (optional)
pinch of salt

Instructions:
Preheat oven to 150°C and bake hazelnuts for 15-20mins until fragrant and the skin starts to crack. 
Let them cool for a while and rub their skin off.
Put dates into a pan and bring to boil. 
Then turn off and let cool.
Put nuts and dates (without water) into a food processor/blender and blend until you have a butter. 
Add coconut oil, vanilla extract and cacao and blend until you have a paste like consistency. 
Slowly add water from dates and/or raw milk (or any other plant milk), until you reach your desired consistency. 
Add honey if needed.
 Store in a glass container in a fridge for up to 3 weeks...if it lasts that long!!!

Lack of sleep affects your performance and damages brain cells


I am an early bird. Everybody knows this about me :)
Well, I was born at 6.25 am which makes it all clear. 
I dont have any problems to wake up, ever...:). 
BUT 
I must say, I also love sleeping. Who doesnt?
I personally prefer short naps in the late aftertoon than a deep long night sleep. 
So I am trying to take an advantage of naps when possible.
Not sure about you guys, but my optimal time of good sleep doesnt exceed 6-7 hours. 

What about you? Do you think you sleep enough?

Make sure you sleep enough. At least 2-3 days a week! 
I know it is hard to go to bed earlier if you see that sink full of dirty dishes, socks all over the floor, unfinished book or DVD, bills to pay, shirts to iron...I KNOW THIS VERY WELL, but we have to be careful and keep in mind that the lack of sleep can cause several health problems later on, if we keep going on without a proper relax and time for our body to recover and energise.

Chickpea Buddha Bowl



Full of flavours, filling, 30-minute Buddha Bowl with roasted sweet potatoes, crispy chickpeas, onion, kale and an amazing tahini-honey sauce!
A healthy, satisfying plant-based meal.

Ingredients needed:
VEGETABLES: 2 large sweet potatoes, 1 big red onion, bag of kale, larger broccoli
CHICKPEAS (soaked overnight) and seasoning to go with it: cayenne pepper/chilli powder garlic powder/fresh garlic, salt, pepper, turmeric, oregano/basil/thyme, fenugreek seeds (optional)
TAHINI SAUCE (optional): 1/2 cup tahini, 2 tbsp raw honey, 1 juiced lemon, bit of hot water to thin
coconut oil
olive oil
salt
pepper

Instructions:
Preheat oven to 200°C.
 Arrange sweet potatoes wedges and onion slices on a bare baking sheet or in baking pan. 
Drizzle with a bit of olive oil and bake for 10mins.
* I cooked potatoes for 5 mins before.
Remove potatoes and add broccoli pieces. 
Drizzle with a bit of olive oil and season with a pinch of salt and pepper. 
Bake for 8-10mins.
Remove broccoli and add kale.   
Drizzle with a bit of olive oil and season with a pinch of salt and pepper. 
Bake for 4-5mins.
Roast seasoned chickpeas on heated coconut oil for about 10mins until golden. 
Prepare sauce. 
Mix tahini, lemon juice and honey and whisk to combine. 
Add hot water until a pourable sauce is formed. 
Mix together and serve with a sauce on the top
